1. Heat water in a frying pan to 40C (slightly warmer than the body temperature).
Make enough warm water for the bottom of a bowl to be submerged in.
2. In a large bowl, mix bread flour, dry active yeast, baking poweder and sugar.
Add warm water (from the frying pan) and mix. Add salt and butter and
knead until the dough becomes smooth (Add more warm water if the dough
is too stiff and add more flour if it is too sticky). The dough should be soft
enough to stick to your hands, but easy to remove.
3. Form into a ball and place in a bowl. Cover with plastic wrap and
place the bowl in the water-filled frying pan. Leave for 10-20 minutes
until the dough doubles in size. Punch the dough and divide into
3 balls. Flatten the balls, sticking corn meal, to make 1cm-thick disks.
4. Place in a non-stick frying pan and cook over low heat, covered.
When the dough rises to 1.5cm (10 minutes), increase the heat
to medium (or to high) and cook for another 5 minutes.
flip and cook the other side until both sides brown nicely.
★ Leave spaces between the dough when you place in a frying pan.
