1. Cream butter until it becomes pale and add sugar (1/3 at a time).
Break up eggs in a separate bowl and mix in.
2. Shift flour, baking powder, baking soda and salt together and mix in.
3. Add milk and mix well until the mixture becomes sticky and moist.
4. Divide into 11-12 muffin cups (lined with paper) and bake in
the oven preheated at 350F(180C) for 20-30 minutes (The baking
time and temperature may vary depending on the oven).
■ Wet the fingers and pat the surface of the muffins slightly before baking.
■ Bring the eggs to room temperature before mixing (the mixture may
split due to the temperature difference. Try to warm up the mixture
and it will be ok).
■ If you want to add puree of fruits or vegetables, use approximately
70% of the milk indicated in the recipe.
■ I used an electric mixer for all the mixing. The dough is quite
heavy by the end, but mix very well.
